RECIPE PREPARATION Greek chicken soup (according to Sylvia's recipe):

Put the chicken to boil and take the foam that forms. Peel and finely chop all the vegetables. When the meat is cooked, add the onion for three quarters, then the vegetables, and a handful of rice and let it boil. all are boiled, add vegeta and pepper to taste. Rub 3 yolks with the juice of a lemon, remove the pot from the heat and wait for it to stop boiling, take it with the polish from the pot and lightly place it over the yolks, stirring constantly. then pour the yolks into the pot, stirring. Bring to the boil again, bring to a boil and turn off the heat. Serve hot with green dill placed on a plate.

Method of preparation

The chicken, washed and cut into pieces, is boiled in 5 liters of water. It foams from time to time. .Add finely chopped onions. When the meat is cooked, remove it, let it cool a bit, then cut the pieces and put them back in the pot.

Separate the eggs, put the egg whites aside (they will be used for another preparation), and beat the yolks with lemon juice and sour cream. Add 3 tablespoons of soup from the pot. at the same temperature as the rest of the soup, which is very important so as not to cut the yolk mixture when pouring it into the soup pot. Put the pot of soup on low heat and leave for another 2-3 minutes, but without boiling, just to bind the eggs. It goes well with salt and pepper. Sprinkle finely chopped parsley on top.

Greek style chicken soup

1. Wash the chicken breast and boil it in 3 l of cold water, then add the peppercorns.
2. After frothing the shard, add parsnips and celery (cut into large pieces).

6. In a bowl, beat the yolks well with the milk, then add the sour cream.
7. Over the obtained mixture add 2-3 tablespoons of soup (stirring continuously), then pour all this composition in the soup pot little by little, stirring all the time.
8. Add the rice (boiled and drained separately), the juice of half a lemon and let the soup simmer for another 10 minutes.
9. At the end, add the finely chopped greens and pepper to taste.
